INGREDIENTS
  • All-purpose flour –  3 cups
  • White sugar – 1 1/2 cups
  • Unsweetened cocoa powder – 3/4 cup
  • Salt – 3/4 tsp.
  • Baking powder – 3 tsp.
  • Milk – 1 1/2 cups
  • 2 eggs
  • Vanilla extract – 1 1/2 tsp.
  • Shortening – 3/4 cup
  • Butter, softened – 3/4 cup
  • Confectioners' sugar – 2 cups
  • Salt – 1/8 tsp.
  • Marshmallow creme – 1 (7 ounce) jar
  • Vanilla extract – 1 1/2 tsp.
  • Milk – 1 tbsp.
INSTRUCTIONS
  1. Preheat oven to 400° F/200°C/Gas Mark 6.
  2. In a large bowl, sift together flour, white sugar, cocoa powder, 3/4 teaspoon salt, and baking powder. Mix in 1 1/2 cups milk, eggs, 1 1/2 teaspoons vanilla, and shortening. Using an electric mixer at low speed, cream the mixture. Drop rounded teaspoons of batter onto ungreased baking sheet, leaving space, as the cookies spread when baking.
  3. Bake in preheated oven for 7 to 8 minutes. Remove from the baking sheet and place wire racks to cool.
  4. For the filling, combine the butter, confectioners' sugar, 1/8 teaspoon salt, marshmallow creme, 1 1/2 teaspoons vanilla, and 1 tablespoon milk in a medium bowl. Cream with mixer until fluffy. You can add blitzed peppermint candies or separate the cream into several bowls and color the mixture with food coloring. Spread filling on one cookie, and top with another sandwich style.
